Subject: Help - can I eat my carrots?

I didn't get my carrots out before the snow hit last year and they are still in the ground. They have firm deep green leaves and other than long hair like roots they are a nice orange colour and snappy crisp. I tried a bite off one and it was very sweet. Can i eat these carrots or am I going to be sorry later if I do?

You will not be sorry at all! I almost envy you, we used to over-winter our carrots in a cellar (dirt) and the carrots were the sweetest, ever. We stored all of our root vegetables in these cellars. You're bringing back childhood memories for me. Thank you!
