What is the best mulch for winter protection?

I use leaves, with maybe some evergreen boughs over top, but I don't put on a heavy protective mulch until the ground freezes........... but then I don't expect that happens very often to you in zone 8, right?

We are growing bananas in Ottawa - honest! they winter outdoors. These are a Japanese variety - we don't expect them to fruit though if we ever had an especially long summer, we MIGHT get bloom. After the first killing frost, we cut them down and protect the root with a deep straw mulch, over which we put a tarp - so the straw does not get wet. It works, what can I say? They have been out there for 4 years.
