Pumpkin Soup

1 Small- Medium Pumpkin

1 Med Onion

Carrots 2 stalks

1 litre Chicken Stock

500 ml 3.5% cream

Flour + butter (Thickening agent)

Salt & pepper to taste

Dash of Worcestershire sauce

ΒΌ tsp Mace or nutmeg


1.Cook vegetables until semi soft (don't brown)

2.Add chicken stock, bring to boil

3.Then Simmer slowly for 40 mins

4.Slowly stir in flour and butter (4-6 oz)

5.Let it simmer until slightly thickened

6.Season with salt & pepper, Worcestershire and mace or nutmeg

7.Add cream and adjust seasonings, let cool

8.Run through blender, food processor or food mill

9.Reheat, and garnish with croutons
