Bringing the Flavours of the World to the Kitchens of North America

Living in Toronto I have the good fortune of being able to experience all sorts of wonderful food from around the world. As I began to experiment with cooking cultural dishes for myself, I was amazed to discover how easy it was! Recipes that seem so intriguing and complex to my North American senses are really just modest cooking methods that were developed in simpler times, long before life (and our kitchens) became complicated. People around the world were, and still are, cooking over open flames with minimal equipment and a great deal of imagination. Yet I found many people like myself were interested in cooking, but became nervous at the thought of working with unfamiliar foods and spices. With experience came greater confidence, and I began to experiment. I discovered that the meals I prepared for myself and my family were limited only by my imagination.

Then I realised that this bountiful selection of ingredients didn't extend far beyond the borders of Toronto. I could walk to a local shop and choose from an array of food that had been transported from around the world, or produced right in my neighbourhood. However, if you live far from a major city, chances are you have a difficult or impossible time finding many of the products I take for granted. Unfair, I thought.

Now, I would like you to benefit from my love and enthusiasm for cultural cuisine. In the pages of this "Discovery Guide" you will find non-traditional products that I have carefully selected for their quality, diversity and versatility. Let me share with you my love of food and help you experiment with new and exciting flavours. Join me in discovering the world through cultural cuisine. I hope you enjoy the trip!
