Herb oregano recipe

The Garden Club met Tuesday July 15. The members have been busy watering and weeding the garden in front of the caboose making it look beautiful for everyone to enjoy and particularly for the visit in early August of the judges from Communities in Bloom. The August meetings are Tuesdays, the 5th and 19th at 7:00 p.m. at the library. Anyone wanting to share some of their perennials with the Garden Club give Bev a call at 242-3490. Our web site is www.icangarden.com/clubs/TumblerRidgegc By now you should have some herbs growing in your garden. Typical herbs are sage, tarragon, parsley, thyme, fennel, dill, rosemary, marjoram, chives, garlic and oregano. The following is a sauce you can make to serve with your freshly caught fish. Heat 3 tablespoons of olive oil in a pan and cook 1 medium sliced onion and 1 chopped clove of garlic slowly until golden brown. Add 2 chopped tomatoes, 1 seeded and diced green or red pepper, 1 teaspoon sugar and 1 teaspoon chopped fresh oregano or 1/2 tsp. dried oregano and a little salt and pepper. Bring to a boil and simmer for 20 minutes until thickened. Serve over cooked fish. Hope you enjoy this recipe. Happy gardening. See you on the 5th.
